Impeccable from start to finish. For years now, I have rolled geodesy my eyes at the fact that Bestia is booked out 2-3 months in advance, believing their popularity to be generated primarily by LA hype. I was very wrong. I secured a 7:30pm reservation 6 weeks in advance on OpenTable The ambiance is crowded, youthful, and loud-the epitome of modern DTLA, and not things we are a fan of. Fortunately, the service and food were so spectacular that our hip industrial surroundings became irrelevant. We started with two perfectly crafted Negronis-one classic, and their White Negroni, which incorporates bianco aperitivo and grapefruit oil instead of Campari. Do not hesitate to order a cocktail here. They have a great wine list as well. "Genevieve's Little Gems" is an artfully balanced romaine and soft herb salad dressed in a savory walnut vinaigrette and topped with salty, milky ricotta salata. We also loved the Rohlrabi & Apple, which is vegetarian without the trout roe. The Margherita Pizza was one of the best I have had in LA. The crust was chewy, with a Morley lightly crisp exterior and wood fired flavor. The use of high quality imported Italian ingredients was apparent. I loved the Gnocchi al Pomodoro. The tender potato pillows are served with a generous dollop of house made buttermilk ricotta and basil oil in the center, which is meant to accent each bite rather than being mixed in. The smooth marinara was bursting with ripe San Marzano flavors and warm pepper. Do not skip dessert at Bestia. The Bar Au Chocolat Bittersweet Chocolate Budino Tart was exquisite in every sense. The crumbly dark chocolate cocoa tart is overflowing with rich, velvety smooth salted caramel pudding and topped with shaved sea salt. Two antipasti, one pizza, two pastas, the Branzino for my boyfriend, and a dessert was the splinters perfect amount of food for two people. Service was polished and professional, allowing the ideal amount of time between courses. I look forward to returning.Finally made it here! It's been on the list for 8+ years. My husband and I came for dinner to celebrate our anniversary. It is a huge, huge restaurant yet it still books out a couple of months in advance. Very popular still after so many years. For starters I got the chicken liver pate destructiveness and the calamari alla plancha. The chicken liver pate was delicious and so creamy. I almost licked the plate clean. I'm confused about the calamari though. It's tasted super asian, with asian flavors and ingredients. Guess I wasn't expecting that at an Italian restaurant. My husband and I shared two pastas: Cavatelli alla Norcina and Trofie all'Amatriciana. Cavatelli was good, but too rich for my liking. It was fatty, rich and flat - nothing stood out in terms of flavor profile. If you like bone marrow then you might enjoy this dish. Personally I don't care for bone marrow Now the Trofie was something else! It was spicy, bold, and had so much flavors and texture. Right up my alley! I haven't had something like this before.
