I was thinking of making a vegetarian lasagna for the potluck since several people mentioned they prefer plant based options. I have a recipe that uses roasted vegetables and a bechamel sauce that has always turned out well. I can also prepare a separate small dish without cheese for anyone who is dairy free. The lasagna needs to rest for about fifteen minutes after baking so I will bring it already cooked and just reheat it at the gathering. For dessert I might bring a fruit crisp using whatever seasonal fruit looks good at the market. Oat topping with a bit of cinnamon and nutmeg gives it a nice flavor without being too sweet. Regarding the timing of the event I think arriving around 530pm would work well so we have time to set everything out before people start eating at 6. I can bring extra serving utensils and plates just in case. Also I have a large cooler we can use for drinks and salads that need to stay chilled. The forecast looks clear so we might be able to use the backyard if the group prefers that. I will check with you closer to the date to confirm the headcount so I can adjust the portions accordingly.
