I finally tried making sourdough from scratch this weekend and honestly it was way easier than I expected. I used a starter I have been feeding for about two weeks and it actually turned out pretty good. The crust was nice and crispy and the inside was soft with those little air pockets you see in bakery bread. My kitchen smelled amazing all day. My neighbor came over to borrow something and asked what I was baking. I might try adding some herbs next time or maybe even some cheese. The whole process takes a while but most of it is just waiting around while the dough rises and develops flavor. You have to be patient but the result is worth it. I think next weekend I will try a different recipe maybe with whole wheat flour or add some seeds on top. Definitely recommend giving it a shot if you have been thinking about it. We should swap notes if you ever give it a try.
It is really satisfying to pull a nice loaf out of the oven and hear that crackle as it cools. I watched a bunch of videos beforehand and they all said the same thing about keeping the starter fed and happy. Mine doubled in size within about four hours which felt like a win. The scoring part was harder than I thought but it still looked decent. I used a simple blade and just went for it. The shape was a little lopsided but that just adds character right.
Now I am already planning my next bake. I want to try adding some olives or maybe sun dried tomatoes to the dough. A friend mentioned that you can also use discard for crackers and pancakes so I might explore that too. There is a whole world of sourdough recipes out there. It is fun to experiment and see what happens. The best part is giving loaves to friends and seeing their reaction. Everyone loves fresh bread.

Saw that new documentary everyone has been talking about last night and I have mixed feelings about it. The cinematography was beautiful and there were some really interesting interviews but I felt like it could have been edited down a bit. It ran almost two and a half hours and there were definitely segments that dragged on longer than necessary. The subject matter is fascinating though and I learned a lot I did not know before. My friend said the director cut is even longer so I think I will stick with the theatrical version for now. Have you seen it yet I would be curious to hear what you thought about the ending especially since I am still trying to figure out how I feel about it. The soundtrack was really good too I should mention that.
The director really focused on the personal stories rather than the big picture which made it feel more intimate but also a bit narrow at times. Some of the interviews were shot in really interesting locations that added a lot of visual depth. I was surprised by how much I did not know about the topic even though I thought I was fairly informed. There was one segment that completely changed my perspective on something I had always taken for granted. I love when a film can do that.
I watched it at home on my own which was nice because I could pause and think about things as they came up. Might watch it again in a few weeks to catch things I missed the first time. There were a few moments that went by pretty quickly and I feel like I did not fully absorb everything. I have been recommending it to people but with the caveat that it is a bit slow in the middle. Still worth seeing though. Would love to hear your take on it.
