I was telling my brother about that hike we did last weekend and he kept asking about the trail conditions near the creek crossing after all that rain we had. Honestly I think the first half was fine because the tree canopy kept most of the path dry but once we got past the old stone bridge it turned into a muddy mess and we both ended up slipping on that steep section near the waterfall. I wished I had brought my trekking poles because my knees really felt the descent the next morning.

He asked if I would go back again and I said yes but only if we start earlier in the day so we can take more breaks and actually enjoy the view from the top instead of rushing down before dark. It is such a peaceful spot once you get past the crowds near the parking lot and the summit has this nice flat rock where you can sit and eat lunch while watching the hawks circle overhead. I think next time we should pack a thermos of tea and just stay up there for a while.

My friend asked me about that sourdough starter I have been maintaining and honestly it has been such a fun experiment even if my first few loaves came out looking like hockey pucks. I kept feeding it at the wrong times and the temperature in my kitchen fluctuated too much so the fermentation was all over the place. Once I moved it to a warmer spot near the pantry and started feeding it on a regular schedule it really came to life and now it doubles in volume within four hours.

I told her the trick is to use a mix of whole wheat and white flour and to keep the hydration around seventy percent so the dough is easier to handle. I have been baking one loaf every weekend and giving some away to neighbors and they have been really nice about it even the ones that were a bit dense. The best part is the smell that fills the whole house while it bakes and the way the crust crackles when it comes out of the oven. I think I am finally getting the hang of it.
