Hey, thanks for the message about the trail conditions last weekend. We ended up going to Mount Rainier instead and it was absolutely stunning. The sky was clear and the views of the mountain were incredible. We did the Skyline Trail loop and saw wildflowers everywhere. The snow patches at the top were a bit tricky but manageable with poles. I packed way too much food as usual but better safe than sorry. We spotted a family of marmots near the visitor center which was a highlight for my kids. The parking lot was full by 8am so we had to wait a bit for a spot. Definitely recommend getting there early. The weather held up perfectly until we were almost back to the car. Overall one of the best hikes we have done this season. Let me know if you want the GPS track or any other details for your trip next month.

I finally tried that sourdough recipe you sent me last week. It took longer than expected because my starter wasn't very active at first. I fed it a couple of extra times and it finally doubled in size. The dough was pretty sticky but I followed the folding method you mentioned and it came together nicely. I added some rosemary and sea salt on top which gave it a great crust. The inside was soft with a nice tangy flavor. My family ate half the loaf while it was still warm. I also tried making a small batch of cinnamon rolls using the discard and they turned out amazing. The texture was fluffier than regular dough. I think next time I will let it proof a little longer in the fridge to develop more flavor. We might have a dinner party next weekend so I will probably make another loaf and maybe a cake. Let me know if you have a go-to chocolate cake recipe that pairs well with coffee frosting. I want to test it out before the party.
